Turkey Meatloaf

Ingredients

  • 1 cup cooked hulled barley
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • ½ cup ketchup divided
  • 1 egg beaten
  • 20 ounces 93% lean ground turkey
  • olive oil cooking spray

Instructions

  • Preheat your oven to 350° F. Spray a 9- x 5-inch loaf pan with nonstick spray.
  • In a large mixing bowl, combine the barley, herbs, salt, garlic powder, onion powder, oregano, pepper, red pepper flakes, ¼ cup ketchup, and egg. Mix well.
  • Add meat to the barley mixture. Using a fork or your fingers, mix just until combined, being careful not to compact the meat.
  • Spoon meat mixture into prepared pan. Spread remaining ¼ cup ketchup over top of loaf.
  • Bake for 50 to 60 minutes, or until the meatloaf reaches an internal temperature of 165°F on an instant-read thermometer.

Notes

2024-01-23 Made this recipe. Very tasty but loaf fell apart. Refrigerated leftovers still a bit crumbly. Consider adding another egg, breadcrumbs, or more barley in the future.
