Turkey Meatloaf

Ingredients
- 1 cup cooked hulled barley
- 1 tablespoon Italian seasoning
- ¼ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes optional
- ½ cup ketchup divided
- 1 egg beaten
- 20 ounces 93% lean ground turkey
- olive oil cooking spray
Instructions
- Preheat your oven to 350° F. Spray a 9- x 5-inch loaf pan with nonstick spray.
- In a large mixing bowl, combine the barley, herbs, salt, garlic powder, onion powder, oregano, pepper, red pepper flakes, ¼ cup ketchup, and egg. Mix well.
- Add meat to the barley mixture. Using a fork or your fingers, mix just until combined, being careful not to compact the meat.
- Spoon meat mixture into prepared pan. Spread remaining ¼ cup ketchup over top of loaf.
- Bake for 50 to 60 minutes, or until the meatloaf reaches an internal temperature of 165°F on an instant-read thermometer.

2024-01-23 Made this recipe. Very tasty but loaf fell apart. Refrigerated leftovers still a bit crumbly. Consider adding another egg, breadcrumbs, or more barley in the future.
