Spicy Corn Salsa

This is very similar to the corn salsa served at Chipotle restaurants.

Servings: 2 pints

Ingredients

  • 4 cups frozen sweet corn kernels thawed, rinsed, and drained
  • ½ medium purple onion diced
  • 3 jalapeno peppers finely diced
  • 1 cup fresh cilantro chopped
  • 2 limes juiced
  • ½ teaspoon salt or to taste
  • 1 teaspoon fresh ground pepper or to taste

Instructions

  • Combine all ingredients. Refrigerate for a few hours. Stir occasionally while chilling to distribute lime juice and other flavors.
