Whole Wheat Banana Cake with Cream Cheese Frosting

Ingredients
Cake
- ½ cup butter softened
- 1 cup brown sugar packed
- 2 large eggs room temperature
- 1 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 medium ripe bananas mashed (about 1 cup)
Frosting
- 1 8-ounce package cream cheese softened
- ½ cup butter softened
- 2 teaspoons vanilla extract
- 3-3/4 to 4 cups confectioners’ sugar
Instructions
- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add eggs, Greek yogurt, and vanilla. Combine flour, baking soda and salt; gradually add to creamed mixture. Stir in bananas.
- Spread into a greased 15x10x1-in. baking pan. Bake until a toothpick inserted in the center comes out clean (do not overbake), 20-25 minutes. Let cool.
- For frosting, in a large bowl, beat cream cheese, butter and vanilla until fluffy. Gradually beat in enough confectioners’ sugar to achieve desired consistency. Frost bars. Store in the refrigerator.
