Fruit and Oat Bars
Quick, easy, and an infinite variety of flavor possibilities.

Ingredients
- 2 cups uncooked oatmeal quick or old fashioned
- 1 cup all-purpose flour
- ¾ cup butter or margarine melted
- ⅓ cup brown sugar firmly packed
- ⅓ cup chopped nuts optional
- ½ teaspoon salt optional
- ¼ teaspoon baking soda
- 1 10 to 12-ounce jar/container of your favorite fruit jam, jelly, preserves, or pie filling
Instructions
- Heat oven to 350° F.
- Grease 9×9-inch glass baking dish.
- Combine all ingredients except fruit preserves. Mix well.
- Reserve 3⁄4 cup oatmeal mixure. Press remaining mixture into bottom of prepared baking dish.
- Bake 10 minutes.
- Spread fruit preserves evenly over partially baked base to within 1⁄2-inch of edge of pan. Sprinkle reserved oatmeal mixture over fruit.
- Bake 20 to 22 minutes or until golden brown.
- Cool.
- Cut into bars. Store tightly covered at room temperature.
Notes
For variation, reduce oatmeal by 1⁄2 cup and add 1⁄2 cup dry brewer’s spent grain plus 2 teaspoons vital wheat gluten. Or substitute whole wheat flour instead of all-purpose flour, but be sure to add 1 teaspoon vital wheat gluten.
