Air Fryer Lemon Garlic Butter Pork Tenderloin Skewers

These pork tenderloin skewers are air-fried crispy with a light lemon garlic butter drizzle. It takes a little extra effort to prepare, but so worth the trouble!

Ingredients

  • ½ cup extra-virgin olive oil
  • ¼ cup white wine such as Pinot Grigio
  • 3 tablespoons lemon juice divided
  • 1 teaspoon lemon zest
  • 4 cloves garlic finely minced, divided
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano
  • 2 teaspoons kosher salt divided
  • 1 teaspoon freshly ground black pepper divided
  • 1 pork tenderloin trimmed, cut into ½ inch slices
  • cup Italian breadcrumbs
  • cup panko
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • 6 6- to 8-inch skewers
  • 1 1-gallon resealable zipper storage bag
  • olive oil cooking spray
  • 4 tablespoons butter
  • 2 teaspoons fresh parsley finely chopped

Instructions

  • Combine olive oil, wine, 2 tablespoons lemon juice, lemon zest, 2 cloves of minced garlic, crushed red pepper, oregano, 1 teaspoon salt, and ½ teaspoon pepper in a 1-gallon resealable zipper storage bag. Add pork and toss to coat. Seal bag and refrigerate 30 to 60 minutes, flipping periodically to distribute marinade.
  • Stir together remaining 1 teaspoon salt and ½ teaspoon pepper with bread crumbs, panko, Parmesan cheese, and garlic powder in a shallow dish. Remove pork from marinade and toss to coat in breadcrumb mixture, pressing to adhere as necessary. Thread pork onto skewers and coat with olive oil cooking spray.
  • Preheat an air fryer to 390℉. Air fry until pork reaches 145℉ and is lightly golden brown and crisp, about 12 to 15 minutes. Avoid overcooking!
  • Meanwhile, melt butter with remaining 2 cloves minced garlic in a microwave-safe dish on High in the microwave, about 30 seconds. Stir in remaining 1 tablespoon lemon juice and parsley. Drizzle butter mixture over pork just before serving.

Notes

Chicken thighs can be used instead of the pork tenderloin if you prefer. Use about 2 pounds of meat cut into 1½-inch pieces and air fry until the internal temperature reaches 165℉, about 12 to 15 minutes. Avoid overcooking!
