Easy Basic Chili
This is a quick and easy basic chili recipe with lots of flexibility.

Ingredients
- 2 pounds ground meat beef, turkey, pork, or combo
- 1 medium onion diced
- 1 green pepper diced (optional)
- 3 15-ounce cans cans diced tomatoes with green chilis
- 1 15-ounce can diced tomatoes optional
- 1 6-ounce can can tomato paste
- 2 15-ounce cans chili beans undrained, black beans (drained), kidney beans (drained), or combo
- 3 tablespoons chili powder
- 4 cloves garlic minced (optional)
- 2 bay leaves optional
Instructions
- Place ground meat, onion, and green pepper in a large stockpot. Cook over medium-high heat, stirring frequently, until meat is browned and onion and green pepper are tender. Drain if necessary.
- Add remaining ingredients. Stir.
- Bring to boil. Reduce heat to medium-low. Cover. Simmer at least 15 minutes. Remove bay leaves if used.
- Serve warm with your choice of toppings such as shredded cheese, sour cream, chopped onion, chopped green onion, cilantro, etc.
