Split Pea with Ham Soup
A traditional winter comfort food.
Ingredients
Stock
- 1 meaty ham bone
- 4 quarts water
- 1 cup chopped onion 1 medium
- 1 cup chopped celery 2 stalks
- 1 bay leaf
Soup
- 13 cups ham stock from recipe below
- 2 pounds dried green split peas 4 cups
- 2 cups ham cubed
- 2 cups chopped onion 1 large
- 2 cups chopped celery 4 stalks
- 3 cups chopped carrots
- 6 cloves garlic minced
- 2 bay leaves
- 2 teaspoons salt
- 1 teaspoon ground black pepper
Instructions
Stock
- Combine all stock ingredients in large soup pot. Bring to boil. Reduce heat, cover, and simmer for 2 hours or more.
- Remove ham bone and any loose ham from pot. Pick remaining ham from bone and dice if necessary. Set ham aside for soup.
- Strain stock. Cool and skim fat.
Soup
- Sort and rinse peas.
- Add reserved ham and all soup ingredients to large soup pot. If there isn’t enough stock, add water to make up the difference. Bring to boil. Reduce heat, cover, and simmer for 75 minutes.
- Remove bay leaves and serve.
